What other food substances are derived from animals besides gelatin?

One is cochineal/carmine (same thing, different name). This is an extract from a certain beetle that is red in color, and used as a dye. Supposedly they have mostly phased it out for "Red No. 40", but i have still seen it in strawberry yogurt and some ruby red gfruit juices.
