Budget/Cheap Eating in Vegas?

Going solo for the first time next week. I just need some recommendations for cheap, but decent buffets on the Strip, preferably in the PH area. Also I'd like some suggestions for 1 or 2 really good, higher end dinners that would be appropriate for a solo traveler. As far as buffets go, I have the $7.77 HR buffet marked down. I need to fill 6 days, but maintain my budget. I have about 1,000-1,500 set aside, and my airfare, hotel, and shows are already paid for. I'm primarily interested in bars (not clubs), restaurants, and casinos (low limit tables), and I don't plan on doing any shopping other than a few souvenirs. Is this enough realistically? Also, please don't comment just to say "don't gamble!" Thanks! Any other suggestions?
